An Ex-Merivale Chef's Alimentari in the Byron Bay Hinterland

Manu Pagliarini has fond memories of growing up in the small Italian village of Sant’Oliva. One of his favourite pastimes was going to the local alimentari, or green grocer’s shop and buying arancini balls. Inspired by his childhood experiences, the former chef will soon fulfil a long-held dream: opening his own deli in the Byron Bay hinterland- but the road to opening hasn't been easy. Plus, the monthly membership balancing pilates classes with wines from a female-championing bottle-o.
