"New Space, Old Joe": A Beloved One-Man Operation From a Local Thai Chef Reopens in a Bigger Space

Joe Kitsana may be the hardest working man in hospitality. Kitsana has been on the Sydney hospo scene for more than 20 years, notably at Longrain as well as neighbourhood mainstays Sailors Thai and Phamish. In June 2016, he took over the lease of neighbourhood cafe Kings Lane Sandwiches, eventually turning it into a Thai restaurant that he ran entirely on his own. Front of house, waiter, dishwasher, head chef: it’s just Joe. Now, the one-man operation has relocated and reopened in a bigger space with the twice the capacity and Broadsheet Editor Lucy Bell Bird thinks he's up to the challenge. Plus, Sydney’s only dedicated specialty hot sauce shop launches in Manly, with fiery drops and an aussie-powered tasting bar.

Every other Tuesday, Broadsheet Sydney: Around Town offers a quiet conversation with someone shaping the city's character. This isn't about headlines or trends, but the people behind the places and ideas that define daily life here. You might hear from a chef who quietly reimagined a neighborhood's dining scene, or an artist whose work changes how we see a familiar street. The discussion could just as easily turn to the craft of a local distiller or the vision of a small shop owner whose taste influences what we wear. Hosted by Broadsheet, each episode is a deliberate look at the intersections of food, art, fashion, and society, revealing how creative minds build the culture we experience. Tuning into this podcast feels like pulling up a chair at a corner table with the most interesting person in the room-the stories are specific, the impact is tangible, and the focus is always on the human element driving Sydney forward. It’s for anyone curious about the why and the who behind the city's vibrant surface.
